Ingredients:
1 lb Chicken Breast
1 cup Brown Rice
2 cups Broccoli
1/4 cup Teriyaki Marinade
Instructions:
Filet chicken breasts, and then cut them up into small strips. Spray pan with Pam spray, so chicken doesn’t stick to pan. Stir fry chicken until full cooked. Drain whatever remaining fat is in pan. Place chicken back into pan and add Teriyaki Marinade and cook on low heat mixing well.
You can cook the broccoli and rice a number of ways. I’m lazy, so I buy broccoli in steamfresh bags, and I love the Success Minute Rice cups – they are pre-cooked and are already in a 1 cup serving. I add that to the chicken when it is almost done to add some flavor to the rice.
Once the chicken and rice is finished, I add my serving size on top of a plate of broccoli.
That’s it.
Another easily prepared, healthy meal.
