For those of you who don’t know how multi-talented I am, that above picture is actually a picture of what I made!
Ingredients:
1 Onion
2 lbs. chicken breasts
1 red pepper
1 green pepper
Pam Spray
Cajun Spice
Low fat Weight Watchers Shredded Mexican Cheese
Josephs lo-carb wheat wraps
Directions:
Trim (if any) excess fat off of chicken. Filet chicken breast in half, then slice into 1 inch thick pieces. Spray Pam into skillet and put sliced chicken in over low heat until almost thoroughly cooked.
While cooking, cut and slice peppers and onions.
When chicken is done, drain excess fat out of pan. Sprinkle Cajun spice over chicken and stir until all pieces are covered.
Mix and pour all onions and peppers in with chicken. Cover and keep over low heat, stirring occasionally for 15-20 minutes for all the juices to get into chicken.
Sprinkle cheese over wrap, add chicken, roll up and eat!
